Chilli oil is a finishing condiment, not a cooking oil. Here is how to use chilli oil in cooking without losing heat, crunch, or flavour.

Knowing how to use chilli oil in cooking is the difference between flat heat and restaurant-level flavour. Treat it as a finisher — add it at the end, not at the start.

Golden Rules

  • Do not deep-fry in chilli oil — high heat kills the fresh chilli flavour.
  • Add off the heat — swirl into noodles, rice, or dal after cooking.
  • Start small — half a teaspoon first; you can always add more.
  • Use the crunch — spoon the sediment as well as the oil for texture.

Everyday Methods

Drizzle: Over eggs, soup, pizza, or grilled paneer.
Dip: Mix with soy sauce for momos and dumplings.
Marinate: Blend with vinegar and ginger for chicken or tofu.
Stir-in: Fold into mayo, hummus, or butter for spreads.

Which Spilo Oil When?

Plain for neutral heat · Garlic for noodles and momos · Onion Smash for parathas and snacks.
